The cellars of central Kansas are unusual and magnificent. The largest percentage of them are barrel vaults and make fantastic wine and fruit cellars. They are usually vented in two places and will maintain around forty to fifty degrees Fahrenheit and about sixty to eighty percent humidity when properly maintained.
